Camping Recipe: Greek Chicken and Veggie Skewers

Ingredients

  • 2 tbsp. olive oil
  • 1 lemon
  • 1 tbsp. dried oregano
  • ½ tsp. garlic powder
  • ½ tsp. salt
  • 4 boneless skinless chicken thighs
  • 1 small zucchini
  • 1 red onion
  • cherry tomatoes

Tzatziki Sauce

  • ½ c. Greek yogurt
  • ¼ cucumber, seeds removed & chopped fine
  • 1 tbsp. chopped fresh mint
  • 2 cloves garlic, finely minced
  • ¼ tsp. salt

Instructions

  1. Wash and dry all produce.
  2. Set your bamboo skewers into a bowl of water to soak. This prevents them burning while on the grill.
  3. Cut the lemon in half and juice it into a bowl with the olive oil, oregano, garlic powder, and 1/2 tsp of salt.
  4. Cut the chicken into 1″ pieces and pat dry with a paper towel.
  5. Toss the chicken in the marinade, stir to coat and set aside while you prepare the veggies.
  6. Cut the zucchini in half lengthwise and then into 1/4″ moons. Chop the red onion into large pieces that will fit onto a skewer.
  7. Slice the cucumber and remove the seeds, you only need 1/4 of the cucumber, just make sure you chop it very finely. Set aside.
  8. Mince the garlic and set it aside along with the chopped mint, as well.
  9. While the chicken marinates for 30 minutes (you can leave it in the fridge for up to two hours), make the sauce.
  10. Blot the chopped cucumber with a towel and combine in a bowl with Greek yogurt, mint, garlic, and salt. Stir to combine thoroughly.
  11. Set your grill to high or built a strong fire and lower the grill grate into place.
  12. Start preparing your skewers. We highly recommend keeping only one kind of ingredient on a skewer, this allows you to customize the cook time to get each ingredient perfectly cooked.
  13. Skewer all the cherry tomatoes, zucchini, onion, and chicken.
  14. Add all your skewers to the grill and cook for 3-5 minutes per side until just beginning to char. Be sure the chicken reaches 165 degrees internal temperature before serving.
  15. Serve with the tzatziki sauce and a side of rice, if you want to add a little more substance to this meal.
