Camping Recipe: Fireside Fajitas

Ingredients

Marinade:

  • Two large limes
  • 2 tbsps olive oil
  • Pink Himalayan salt
  • Six garlic cloves
  • 1 tsp cumin

Ingredients:

  • 1 lbs boneless skinless chicken breast
  • One large sweet onion
  • One red bell pepper
  • To jalapeño peppers
  • One bunch of cilantro
  • One avocado
  • Shredded cheese of choice, I recommend Mexican taco blend
  • Sour cream
  • One package of 10-inch corn or flour tortillas

Instructions:

  1. If you want to save time at the campground, you can make the marinade ahead of time. This just involves mixing the lime juice, olive oil, salt, garlic, and cumin together in a resealable bag.
  2. Once you’re ready to start cooking or the night before, slice the chicken into thin strips. I recommend letting the meat soak for at least an hour but overnight is best.
  3. While the meat marinates, wash and dry all your produce.
  4. Next, slice the onion and bell pepper into strips and set aside. Then chop the jalapeño and set aside in a separate container from the bell peppers and onions.
  5. Build a strong fire and clean the grill grate with a towel dipped in oil and a pair of tongs. This isn’t 100% necessary because the fajitas will be wrapped in foil, but it is good practice.
  6. Take four large sheets of aluminum foil and divide the meat and vegetables among the packets. Close the packets and fold the edges to ensure a tight seal, then wrap two or three more layers of aluminum foil around the outside to avoid the juices leaking.
  7. Set the foil packets on the grill, grate, and allow to cook for about 10 Minutes. 
  8. Flip the packets and cook for an additional 10 minutes.
  9. Prepare all your toppings and tortillas for all the fajitas while the meat and veggies cook.
  10. You’ll want to peel and slice the avocado and lightly steam the tortillas.
  11. When you’re ready to serve, remove the packets from the fire and use a spoon or fork to open them to allow the steam to vent. Then add the meat and vegetables to the center of a tortilla and top with cilantro, jalapeño avocado cheese, and sour cream.
